酒莊拜訪 Domaine Catherine et Claude Maréchal - Bligny-lès-Beaune

我想和大家分享一個新發現：位於 Bligny-lès-Beaune 的 Catherine et Claude Maréchal 酒莊，這是我以前從未接觸過的酒莊。我和太太當初在 Beaune 買了一瓶他們的 Chorey 2020，結果一喝傾心，這份純屬巧合的驚喜便促成了我們隨後的拜訪。

真正讓他們的葡萄酒（特別是紅酒）脫穎而出的，是其迥異於多數典型勃艮第紅酒的獨特風格。Claude 採用了發酵前延長低溫浸皮（cold maceration）以及長達 16 至 22 個月的長期aging。這種手法賦予了葡萄酒令人驚豔的深度：它們擁有深邃吸引人的酒色、比一般典型勃艮第更扎實的單寧結構，以及極佳的濃郁集中度。然而，它們依據保有濃郁的香氣，在口中展現出深沉且如天鵝絨般的絲滑質地，同時依然能清晰感受到黑皮諾那辨識度極高的迷人表現。這無疑是對勃艮第風土一種引人入勝且與眾不同的精彩詮釋。

除了這些令人印象深刻的紅酒外，他們也釀造了幾款極其美味的白酒 — 他們的 Savigny 白酒就美得令人讚嘆，口中盈滿了成熟黃色水果、鮮奶油與布里歐麵包（brioche）的香氣。

當天所有的酒款都表現得可圈可點，但我必須特別讚賞他們的 Pommard 紅酒，它將力量感與優雅細緻完美融合，表現極為出色。

🇫🇷 I wanted to share a wonderful discovery: Domaine Catherine et Claude Maréchal in Bligny-lès-Beaune, an estate I hadn’t encountered before. We found them purely by chance after a bottle of their Chorey 2020, bought in Beaune, completely captivated my wife and me, prompting a visit.

The welcome from Claude himself was exceptional – incredibly friendly, deeply passionate, and generous with his explanations about his winemaking approach.

What truly sets their wines apart, especially the reds, is their distinctive style compared to many Burgundies. Claude employs techniques like extended cold maceration before fermentation and long aging periods (16-22 months). This results in wines with impressive depth: they boast a deep, inviting colour, a more significant tannic structure than typical, and a wonderfully concentrated profile. Yet, they remain intensely aromatic, offering a profound, velvety texture, on the palate while still being unmistakably expressive Pinot Noir. It’s a compelling and different take on Burgundy.

Alongside these impressive reds, they craft a few absolutely delicious whites – their Savigny Blanc is beautiful, offering ripe yellow fruits, cream, and brioche on the palate.

All the wines showed very well, but I must give a special nod to the Pommard for its superb synthesis of power and finesse.
